Even when each friends help BIP324, the initiator of the connection won’t have identified that the acceptor did. Bitcoin Core (as of v27) has downgrading logic (i.e., it would retry with v1 if a v2 connection fails in some circumstances), however no improve logic (it won’t routinely reconnect when a v1 peer tells it it helps v2).
My greatest guess is just that your peer didn’t have up-to-date "addr" details about your node.
